Mushroom: Veggie that will make you bloom!

Written by Stéfanie Crevier, our newest recruit Naturopathic student at the Quebec Institute of Naturopathic Education, massage therapist, founder of the Natural Care Refuge, culinary explorer, but especially the mother of three wonderful children, Stéfanie joins our team to to share with you his favorites, his healthy recipes, his eco tips, his discoveries and his ideas to make your family life easier!

I'll start by confessing something: I H-A-T-E mushrooms! And it’s been the case for as long as I can remember. They haunt my worst nightmares and if by any chance a little piece has hidden well in a spaghetti sauce or pizza, gag reflex guaranteed! I can detect a mushroom as finely cut as it is from miles around! I swear, no kidding, I have an internal sensor! Well, I know it sounds extreme, but those who know me could confirm it!

That being said, this problem makes me really sad because I love exploring the culinary world and there are so many great recipes that include mushrooms! There are some for all tastes, all shapes, big, small, dried and even magic mushrooms! Yeah… well, not those. And in addition to being visibly great in the kitchen, the mushroom is also an ultra-powerful food. Indeed, I learned in my healthy eating class how powerful and essential their properties are.

Let me explain.

Mushrooms are powerful adaptogens: they stabilize the body's normal functions, helping it to adapt to physical, chemical and biological stress (temperature changes, toxins, infections, stress). You can understand why I absolutely want to include them in my diet! Well, I found a way to do it: with Land Art Canada's Organic Mushroom Extract! Composed of five mushrooms known for their health effects: shiitake, maitake, reishi, chaga and lion’s mane, their benefits are numerous: immune stimulants, anti-cancer, anti-inflammatory and tissue regeneration. Wow!

I started by trying it plain: don't forget that I don't like mushrooms, so imagine an extract!.... Well, it's not that bad! It tastes like soya sauce, but it's not salty. And I have found a way to integrate it into my diet without difficulty, because it goes very well with sauces, dressings and I also use it in vegetable juice recipes.

Talk of vegetable juice; I suggest you try this one (for 2):

- 2 carrots

- 2 stalks of celery

- 1 French shallot

- 1 clove of garlic

- 2 tomatoes

- 1 red pepper

- A small bouquet of parsley (to taste)

- A few basil leaves (to taste)

- 1 tbsp Land Art Canada mushroom extract

- 1 tsp. horseradish

- 1 tsp. turmeric

- Salt and pepper (to taste)

You put all the ingredients in a juice extractor, except the last four. Then you mix with a spoon and add the remaining ingredients, 2-3 ice cubes and it’s ready to enjoy!

D-E-L-I-C-I-O-U-S! And full of benefits, thanks to the mushroom extract!

Cheers!
