Here’s a fruity, sophisticated and refreshing take on iced tea!
2 ripe peaches, cut in chunks
1 cup water
1 cup sugar
1/4 tsp. vanilla extract
4 tbsp. black tea
1 L hot water (approx. 95°C)
2 tbsp. Cranberry
In a small pot, bring water, sugar and peaches to a boil. Lower the heat and crush the peach chunks using a wooden spoon. Once sugar is dissolved, remove from heat and let sit for about half an hour. Steep the tea in the hot water for 4-5 minutes. Once the tea is ready, remove the leaves with a strainer, then place in the fridge to cool. Once the peach mixture is at room temperature, strain (but don’t forget to eat those delicious peach chunks with ice cream!) and add vanilla, then put in the fridge. When ready to serve, add the Cranberry to the tea, then sweeten with the peach syrup to taste. Serve ice cold with fresh fruits.
