The Cookies

Ingredients for the cookies

  • 3 cups flour
  • 2 measuring spoons Unflavoured Land Art Spirulina
  • 1 tbsp ground ginger
  • 2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 3/4 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup molasses
  • 1/2 cup softened butter (or vegan butter)
  • 1 egg (1 small ripe banana, mashed for a vegan recipe)
  • 1 tsp vanilla extract

Preparing the cookies

  • In a medium bowl, combine the dry ingredients: flour, spirulina, spices (ground ginger, cinnamon, cloves, and nutmeg), brown sugar, baking powder, baking soda, and salt.
  • In another large bowl, whisk the molasses with the softened butter, egg, and vanilla until smooth.
  • Gradually stir in the dry ingredients and mix until a ball of dough forms. Wrap the dough in plastic wrap. Refrigerate for 30 minutes.

Baking the cookies

  • Preheat oven to 350°F
  • On a lightly floured surface, roll out the dough to a 1/2-inch (1 cm) thickness.
  • Using a gingerbread man or tree-shaped cookie cutter, shape your cookies. Place the cookies on one or two baking sheets lined with parchment paper.
  • Bake each sheet for 10 to 12 minutes. Remove from the oven and let cool before serving.

The icing

Ingredients for the icing

  • 1 egg white (vegan alternative for a vegan recipe)
  • 1 1/2 cups powdered sugar
  • 1 measuring spoon of Unflavoured Land Art Spirulina*
  • A few drops of water or vanilla

Preparing the icing

In a bowl, whisk the egg white, icing sugar, and Nature Land Art Spirulina with an electric mixer or whisk until smooth. If necessary, add a few drops of water or vanilla to soften the texture.

*Possibility to substitute Land Art Mint Spirulina or Land Art Apple Spirulina depending on the desired frosting taste.
